2015 Tamar Valley Chardonnay
Chardonnay sourced from 27 year old vines located in Winkleigh on the West Tamar hinterland.
Very low yields (approx 1 kg/vine or 4.5 tonne/ha) ensuring perfect ripeness. Handpicked, the winemaking for this wine was inspired by the great wines of Chablis. It was whole bunch pressed, wild yeast fermented in small stainless steel tanks, and matured in old oak puncheon (50%) for 5 months. Total maturation of 10 months on fine lees. Some lees stirring, and full malolactic fermentation were used to create a highly aromatic, textural wine, with attractive mid palate creaminess. The wine shows real tension between ripe pear/stone fruits on one hand, and mouth coating wet stone minerality and natural acidity on the other.
