Our first ever sparkling wine release – made from 100% Chardonnay grapes, sourced from our original vineyard planted in 1994. The wine was gently whole bunch pressed, then fermented in a combination of French oak barrels and stainless steel, without malolactic fermentation. The wine was bottled and left on lees for more than 10 years. This has accentuated the characters of chardonnay from our region, and even more so, our vineyard – grape fruit, lemon zest and nashi pear, interwoven with intense iodine notes and oyster shell. The time on lees has created a textural, creamy mouthfeel, with hints of almond, shortbread biscuit and ginger spice. The finish is long with taut acidity, and impressive salty minerality. 3g/L dosage.
