Sinapius 2019 Grüner Veltliner x 2

Our Grüner Veltliner was handpicked and destemmed allowing a few hours of skin contact prior to pressing. The wine was naturally fermented in a new, 1500 litre oak foudré, where it remained on yeast lees for 10 months.

Straw gold in colour, this wine displays aromas of ripe pear, white peach, citrus and white flowers. The palate is fine and textural, with layers of preserved lemon, fresh cut pineapple, and spring blossom, with beautiful line and length.

Sinapius 2019 Esmè x 2

100% Estate Grown Gamay sourced from our high density planted vineyard (7700-11,111 vines/ha), planted in 2013.

Gently handpicked to ensure all bunches remain intact, the grapes underwent traditional whole cluster carbonic maceration for 3 weeks, without any addition of sulfur. Matured in old barriques for 5 months, and bottled without fining and filtration in November 2019. Minimal sulfur added (<20ppm) prior to bottling. The wine opens with an intensely perfumed nose, showing bright red cherries and hints of violets and wild fennel. Light to medium bodied, the palate is sweet’n’silky, full of juicy pomegranates, with fine/chalky tannins. This wine has great length and persistence, with a wonderful fine spice and lively acidity to finish. Please store or cellar below 16° to ensure optimal drinking. Alc 12%. Cellar to 2022.

2018 Chardonnay x 2

100% Estate Grown Chardonnay sourced from our high density planted vineyards planted at 7700 – 9615 vines/ha, totalling 9 different, low yielding chardonnay clones (less than 1kg/vine).

Handpicked at 11.2 – 11.5° baumè, and whole bunch pressed to tank without enzymes. Lightly settled overnight without chilling and transferred to barrel, retaining most of the solids. Wild yeast fermentation, full malolactic fermentation and 12 months maturation in French oak barrels 85% (10% new) and 15% tank. Blended after 12 months and settled in tank for six months for natural clarification prior to bottling without fining or filtration, in September 2019.

Pale yellow in colour, this wine displays attractive floral notes and aromas of citrus, white peach, pear blossom with subtle smoky characters. The palate is rich, with tangy citrus pith, Beurré Bosc pear and white peach, interwoven with a chalky texture and nuanced minerality. This elegant wine is beautifully focused and complex, with a long powerful finish.
