2024 Clem

Inspired by the traditional Austrian Gemischter Satz wine, Clem is a co-fermented field blend of six white varieties—Pinot Gris, Pinot Blanc, Gewürztraminer, Riesling, Grüner Veltliner, and Chardonnay Musqué—harvested from our dry-grown, close planted vineyard (7,700 vines per hectare). All grapes were picked on the same day, destemmed, crushed, and left on skins for up to seven days, imparting a distinctive amber hue and complex texture.

Following pressing, wild fermentation continued naturally in tank, before maturation on fine lees for seven months in a combination of a 1500-litre Foudre and seasoned French oak barriques.  The wine underwent 100% malolactic fermentation and was bottled unfined and unfiltered, preserving its full expression.

On the nose, Clem reveals a complex aromatic profile of apricot nectar, rose water, and musk, enhanced by subtle smoky nuances. The palate is creamy and textured, with a gentle phenolic grip derived from extended skin contact, balanced by vibrant minerality that reflects the vineyard’s soils. The finish is elegant and saline, adding freshness and length. Rich yet precise, Clem is an ideal food wine, showcasing layered complexity and a true sense of place.
